It contains only 2% fat and is rich in protein, making it an extremely healthy and versatile food, ideal for an appetising starter or a second course which is quick to prepare and elegant to taste.
Excellent served cold thinly sliced, it can be eaten on its own or with the addition of rocket, grana flakes, oil and lemon or balsamic vinegar.
