About
Carnaroli is a medium grained rice grown in the pavia, novara and vercelli provinces of northern Italy. It keeps its shape better than other forms of rice during slow cooking because of the high amylose content, allowing for a perfect al dente yet smooth risotto texture.
A typical Italian variety of rice with a pearly colour, for risotto preparation.
