Saint Maure is made as a roll with a straw cane through its center. The straw is intended to facilitate handling of the delicate cheese and helps air flow through the cheese’s core in the first days of aging. The straw is removed at the end of the aging process, before packing. Another special characteristic of Saint Maure is the lactic fermentation that it undergoes during manufacturing, without use of bacteria. When it ripens, the coating becomes dry and hard, and the inner part of the cheese becomes soft and almost liquid.
Soignon is a manufacturer of goat and sheep's milk products. It started in the year1895 by the consistent efforts of 80 producers of a small village in Deux Sevre. Since 2009, Soignon has adhered to have been engaged in an eco-design approach for offering its customers with quality packaging and contribute towards environmental sustainability.
