Stay crunchy and cool as a cucumber this season
The juicy, hydrating cucumber can either be served with or without seeds, making them an easy choice in plenty of dishes.
Some varieties have thicker seeds that can be a little harder to digest or a bit bitter if the cucumber is on the mature side. However, there is a lot of flavour around the seed, so if the cucumber's seeds are still small and tender, you can easily leave them in.

An all-time favourite cucumber salad recipe, this easy dish can be whipped up in minutes.
Combining cucumbers, rice vinegar, and chopped fresh herbs, use up the bounty of summer with this refreshing and crispy salad.
Make and eat immediately, or chop everything ready to assemble when your guests arrive, or you're minutes away from lunch.
- Peel two or three cucumbers
- Quarter the cucumbers lengthwise, then slice crosswise
- Take a bowl and add 1-2 tablespoons of chopped fresh dill and basil
- Next, add 2-3 tablespoons of seasoned rice vinegar
- Add salt and pepper to taste
- Finally, mix in the cucumber pieces until coated
