Those who like to exercise before iftar can reach for a healthy rice cake loaded with nut butter. Cashew butter is easy to make and is perfect for a burst of energy after a day without sustenance.

This snack is quick and easy to make and can be topped with fruits and whole nuts to keep you going until after that shower. Try this simple cashew butter that takes just 10 minutes to prepare and has 117kcal per serving.

Put 450g of dry-roasted cashew nuts in a food processor and blitz. Pour in three tablespoons of coconut oil and keep processing until it reaches a smooth, creamy cashew butter consistency.

Cashew butter chicken

This easy low-carb dish is packed with iron rich veggies, crunchy cashews and chicken. Serve with your favourite steamed greens and a scattering of coriander and you won't need anything else after sunset. Use Goodness Foods Red Chilli Dry Roasted Cashews for an extra bite.

  1. Chop an onion, mince a garlic clove, an inch-size piece of ginger, 2-3 chillies and a handful of coriander stalks.
  2. Put them in a small food processor and blitz.
  3. Next, heat a large, non-stick frying pan over a medium heat.
  4. Add 100g of cashews, a tablespoon of oil and stir-fry for five minutes.
  5. Add a teaspoon of garam masala and cook for a further two minutes.
  6. Add a 400g tin of tomatoes and 450ml of chicken or veggie stock to the pan.
  7. Blitz everything in a blender until smooth.
  8. Return to the pan, season and lower to a simmer.
  9. Cook for 30 minutes then add 500g of cubed chicken, and simmer for another 15 minutes.
  10. Throw in 150g of Greek yoghurt and 10ml of cream, and stir well.
  11. Scatter with the coriander leaves and serve with 165g of boiled or steamed greens.
