Keep it clean
Follow these simple ingredients and it's easy to keep recipes clean from too many sugars and unwanted "nasties".
Butter: Try and go for full fat, organic butter. You can also use coconut oil in place of the butter.
Good quality cocoa: A household staple. Choose organic, unsweetened cocoa powder.
Maple syrup: While it is still a sugar, so should be sued in small amounts, it's a natural sugar.
Spelt flour: On a Clean Eating diet, you can choose from a wide variety of whole grain flours and spelt is one of them. otherwise go for the gluten-free options. (You can also make this recipe with regular, self-raising flour).
Baking powder: Try and make sure it is aluminium and GMO-free.
Vanilla extract: It's a better option than vanilla essence and the more natural the better.
Eggs: Choose free range, organic eggs.
The serving is to make a large mug cake and is probably a bit too much for a young child, however, a teenager or child with a larger appetite will devour and happily go for seconds!
How to make it?
The instructions are easy enough for kids to follow alone if they can read.
- Grab a large mug and put one tablespoon of butter (or coconut oil), half a tablespoon of cocoa powder and a generous tablespoon of maple syrup in the bottom.
- Mix together until smooth.
- Add three tablespoons of flour, half a teaspoon of baking powder, a quarter of a teaspoon of vanilla extract and one egg to the mug.
- Mix again (carefully) until well combined and smooth.
- Microwave for 50 seconds.
- Keep a close eye on the cake. As soon as it rises above the mug top, it’s a sign that’s it’s a couple seconds from being ready.
