Reminisce in the kitchen this Mother’s Day

Celebrate the day that connects us all and whip up dishes with an overwhelming power to bring back childhood memories.

Mother's Day is celebrated across the world, in more than 50 countries, though not all countries celebrate it on the same day.

Arabic Mother’s Day is celebrated on March 21, while Russia, Serbia and other Eastern European nations mark it on March 8.

It’s Mothering Sunday on March 19 in the UK, Ireland and Nigeria, and on March 25 in Slovenia.

From a basic sponge cake, a firm favourite especially when birthdays came around, to traditional family recipes and dishes.

Go on, call your mum and get her to send you a recipe you can try to mark a special day, and special lady, all in one go.

A traditional Victoria sponge

Baking with mum in the kitchen is something many remember from their earliest years.

A firm favourite on a UK kitchen counter, and a staple at the annual school fair cake table, a basic sponge recipe always hits the spot.

Try whipping up this easy recipe. It's easier than you might think and mum will thank you for it.

  1. Pre-heat oven to 180ºC. Grease and line two 20cm (8 inch) sandwich tins.
  2. Cream together 225g of butter and 225g of sugar until light and fluffy. Gradually beat in 4 eggs and a teaspoon of Madagascan vanilla extract.
  3. Fold in 225g of self-raising flour with a metal spoon.
  4. Divide the mixture between the two tins and bake for approximately 25 minutes until golden brown and firm to the touch.
  5. Remove from oven and leave to cool before turning out onto a cooling rack.
  6. Put a tub of whipping cream in a bowl and beat until soft.
  7. Spread a layer of jam on the bottom cake, followed by a generous layer of whipped cream. Add fresh strawberries if desired.
  8. Sprinkle icing sugar on top and place fresh berries as you like. You can also use fresh cream on the top.

Bangers and mash

A quick, easy and yet substantial meal, turkey sausages served with fluffy mash and onion gravy are sure to bring back some family memories for many.

The name "bangers" is believed to come from the habit of sausages bursting in the pan with a bang if cooked too quickly.
