From bean to bar
Who knew a creamy bar of milk chocolate once started as beans growing on a tree.
Let's look at the process of making chocolate.
- Seeds from a cacao tree are covered with banana leaves and left to ferment.
- The fermented beans are then transported to a processing plant, where they are roasted slowly at a low temperature.
- Then it’s time to separate the shells from the nibs so that the nibs can be ground to a fine powder called cocoa liquor (100% pure chocolate).
- The cocoa mass is often liquified and molded with or without other ingredients. This is the state where you get chocolate liquor.
- The chocolate liquor then gets processed into two components – cocoa butter and cocoa solids.
- Cocoa powder is produced and packed for purchase that we can use to bake in cakes and cookies.
- Cocoa butter is mixed with milk and other ingredients to make chocolate bars and sweets for consumption.
