Method

  1. In a large pot, heat the oil with a splash of water over medium-high heat and saute the onion for 5 – 7 minutes. Add the spices and saute for a further minute.
  2. Add the butternut squash, bell peppers, beans, tomatoes and vegetable broth and optional cocoa, bring to a boil, reduce heat, cover, and simmer for about 45 minutes.
  3. When the butternut squash is tender, remove from the heat. Taste for flavour and add any extra spices. The chili will thicken upon cooling, so give it some time.
  4. The chili can also be made in the slow cooker. Place all the ingredients into your slow cooker, finishing with the vegetable broth and give a good stir. Cover and cook on low for 6 – 8 hours, or on high for 3 – 4 hours. Taste, and season with additional salt and pepper or seasonings as needed.
  5. Serve with a garnish of your choice. We love chopped avocado on top and lime wedges for a citrus kick.
