Ingredients

Method

  1. Place all ingredients in a pot and sauté with a touch of olive oil for around 10 minutes. Pour over all the veggie or chicken stock.
  2. Bring to the boil and then simmer for 30 minutes. Take off the stove when done.
  3. With a blender or a hand blender purée to your liking.
  4. Serve with a dollop of crème fresh or Greek yogurt, as well as a pinch of cracked black pepper.
