Method
- Melt the butter, milk and two tablespoons of the oil in a pan. Mix the ingredients together over a low heat.
- In a separate bowl, mix together the flour, baking powder and half of the caster sugar.
- Next, transfer the melted butter mixture into the bowl with the flour and sugar and mix well.
- When combined, separate the mixture and shape into small balls.
- Heat the litre of oil in a deep pan on a high heat until . Carefully place the balls into the mixture and cook for a few minutes, turn occasionally until cooked through. Once cooked, remove with a slotted spoon and place on kitchen paper to drain.
- Remove the seeds from the vanilla pod and mix them together with the remaining caster sugar.
- Take each doughnut and roll in the vanilla and sugar, ensuring each is covered evenly.
- Place the raspberries in a bowl, squirt some orange juice over and then mash to make a puree.
- Serve the doughnuts warm with the raspberry dip.
