Method
- Mix the ground almonds, coconut sugar, fully-sieved flour and matcha powder in a bowl.
- In a separate bowl whisk the almond milk, eggs and vanilla essence until fully blended.
- Slowly whisk in the dry flour mix a spoon at a time to avoid making any lumps. Keep going until all the flour in mixed and you have a smooth batter.
- Heat the coconut oil in a frying pan on medium heat. Then, pour about one-eighth of your mixture into the pan until a circle forms. If the batter is too thick, add a little more almond milk and whisk again.
- Leave for a minute or so then flip to cook the other side. Each side should be lightly browned
- Stack high and add as many toppings as you desire. Best served hot.
