A classic, stylish combination with pan-fried scallops and refreshing French apple


Ingredients

Method

  1. Pan fry the scallops for 2-3 minutes on each side. Cut the scallops into two or three thin slices. Season with lime juice and zest and olive oil.
  2. Wash and finely julienne all the French apples. Add a teaspoon of lime zest and the juice of half a lime.
  3. Place the apples, mint leaves and scallops in a moistened rice paper and roll up like a nem.
  4. Make the raspberry vinaigrette by blitzing all the left over ingredients. Serve over the rice rolls.
