Method

  1. Preheat the frying oil over a medium heat.
  2. Whisk the ready-to-mix tempura mixture with cold water to form a batter.
  3. Season the Royal Gala Apple slices with a pinch of salt and black pepper before coating them with flour. Make sure to remove any excess flour.
  4. Dip the coated apple slices in the tempura batter and fry them on high heat until golden brown and crispy from the outside.
  5. Remove from oil and leave to drain on a paper towel.
  6. In the meantime, prepare the blue cheese sauce by combining the blue cheese, cooking cream the lemon zest with a hand blender.
  7. Build your sandwich by adding a slice of breaded apple on toasted brioche, then add fresh endive leaves and a drizzle of blue cheese sauce. Top it with toasted brioche.
