A fresh summer salad to beat the heat


Ingredients

Method

  1. Peel and coarsely grate the carrots. Put into one half of a serving bowl. Wearing kitchen gloves to stop your hands from getting stained, peel and coarsely grate the raw beetroot. Put into the other half of the bowl.
  2. In a small bowl mix together the orange juice and zest, honey and some seasoning to make a dressing.
  3. Finely dice the apple (keeping skin on) and scatter over the grated vegetables, together with the walnuts and parsley.
  4. Arrange everything on a bed of green lettuce, drizzle over the dressing and serve while fresh and crisp.
