Enjoy hot and straight from the oven, but remember to allow them to cool and set completely. Yum!

Method

  1. Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper.
  2. Place butter and sugar in a bowl. Using an electric beater, beat until pale and creamy. Add eggs, one at a time, beating well after each addition until combined. Add flour and stir until a dough forms. Turn on a lightly floured surface to bring dough together.
  3. Roll tablespoonfuls of dough into balls and place 4cm apart on trays, allowing room for spreading. Use a spoon or your finger, make indents in balls. Divide jams among indents.
  4. Bake for 20 minutes or until golden. Set aside for 5 minutes to cool slightly before transferring to a wire rack to cool completely.
