Little bites of magic, perfect for quick lunches and lunch boxes

Ingredients

300g Cottage cheese
4 Large eggs
1 Small red onion
80g Cherry tomatoes
3 Large mushrooms
80g Asparagus spears
1 Cooking spray
1 tsp Salt and freshly ground pepper

Method

Preheat your oven to 180°C and lightly spray 12 muffin cases with low-calorie cooking spray or use silicon cases.
In a bowl, mix the cottage cheese, eggs, onion, salt, and pepper with a fork until all mixed together well.
Spoon the mixture into the cases and top with the finely chopped tomatoes, mushrooms and asparagus. Bake in the oven for 25-30 minutes or until golden brown and beginning to firm up in the middle. Allow cooling.
