Just the right amount of salty and sweet, this salad is appealing to the eyes and is great for entertaining large crowds


Ingredients

Method

  1. Chop the cucumber, spring onion, feta and place in a bowl.
  2. Grate the lemon zest and add to the bowl along with the pomegranate molasses.
  3. Mix the lemon juice, olive oil and black pepper and blend.
  4. Mix all the ingredients together using your hands and then drizzle the lemon oil mixture over before serving.
