Method

  1. To make the brownie batter, melt the chocolate and butter in a double boiler over hot, but not boiling, water, stirring often. Cool until barely warm. While the chocolate mixture is cooling, preheat oven to 175°C and butter 23cm square baking pan.
  2. To prepare the cheesecake mixture beat the cheesecake ingredients until smooth and set aside. Add the sugar, beaten eggs and vanilla to the chocolate mixture and beat lightly with a rubber spatula until combined. Slowly fold in the flour.
  3. Spread three quarters of the brownie batter in the prepared pan. Bake brownies for 30 minutes. Remove from oven and cool completely in the pan on a wire rack. Cut into strips and set aside.
  4. To build, place brownie pieces on a plate and layer the cheesecake mix on top. Swirl the raspberry jam throughout the layers and top with fresh fruit.
