Meatless kidney beans patties make perfect nutritious and healthy appetisers, sides or a main meal in a thick, warm bun


Ingredients

Method

  1. Pre-heat grill to high. Tip the kidney beans into a large bowl and roughly crush with a potato masher. Add breadcrumbs, chili powder, coriander stalks, half the leaves, egg and two tablespoons of the salsa. Season and mix together well with a fork.
  2. Divide the mixture into six, wet your hands and shape into burgers. The burgers can now be frozen if desired, otherwise place on a non-stick baking tray and grill for 4-5 minutes on each side until golden and crisp. To cook from frozen, bake at 180°C for 20-30 minutes until hot through to the middle.
  3. While the burgers are cooking, mix the remaining coriander leaves with the yogurt, lime juice and a good grind of black pepper. Split the buns in half and spread the bases with some of the yogurt. Top each with leaves, avocado, onion, a burger, another dollop of the lime yogurt and some salsa, then serve.
