The succulence of the chicken combined with the crispiness of apple and potato is certain to make this dish a new family-favourite.

Method

  1. Melt butter in a pan over medium heat. Add rosemary, thyme, salt, pepper and orange zest. Cook for 5 minutes, stirring constantly.
  2. Rub the chicken with the herb mixture until well coated. Refrigerate for 2 hours.
  3. Preheat the oven to 170°c.
  4. Place the marinated chicken in a roasting pan. Add apple and potato. Roast for 35 minutes. Increase temperature to 190°C and roast for 15 more minutes.
  5. Be sure to serve warm.
