About

An Emirati beef stew combining a wide range of vegetables from countries including Australia and Holland, perfumed with locally-made aromatic dried lemon.


Ingredients

Method

  1. To make the spice mix, combine all the spices together in a bowl and mix.
  2. Next begin the beef stew by sealing the beef in a pan with a dash of oil until brown on all sides. Remove and set aside for late.
  3. Lower the heat to the pot then add onion and cook until it softens, stirring often. Add tomato paste, stirring always let it cook for a minute or two, before adding garlic, spices, salt, dried lemon. Cook for another few minutes until fragrant and bubbling.
  4. Add the remaining ingredients: vegetables, tomatoes, water and return the beef to the pot. Increase the heat and bring the stew up to a boil, then cover the pot, lower the heat to a slow simmer until beef is completely cooked. Serve with rice or bread.
