Feel like spoiling mum for breakfast? These are definitely a very special breakfast treat and make a lovely change from the usual, daily school-run cereal bar.


Ingredients

Method

  1. Preheat the oven to 150˚C. Carefully cut the croissants in half to form a pocket, do not cut all the way through.
  2. Spread strawberry jam in the pocket and fill with sliced strawberries (or other berries).
  3. Place sugar, egg, milk and vanilla in a large bowl and whisk until completely combined.
  4. Heat half the butter in a large frying pan over medium heat and when it’s sizzling dip the filled croissants into the milk mixture.
  5. Place croissants in the pan and cook until golden on both sides. Remove and place on a wire rack over a baking tray.
  6. Pop in the oven to keep them warm until you’re ready for the big surprise. Serve croissants dusted with sifted icing sugar and with the extra strawberries, sliced, on top if desired.
