This simple and easy sweet potato soup is blended with fragrant ginger and coconut milk


Ingredients

Method

  1. Add the oil to a pot setting it to medium heat on the stovetop to heat up for 1 minute. Add the onions to sweat for 2 minutes before adding in the garlic and ginger cooking 30 seconds.
  2. Stir in the sweet potatoes, chicken stock and coconut milk. Once the soup starts to boil reduce the heat and simmer for 30 minutes until the potatoes are cooked.
  3. Remove the soup from the heat letting it cool for a few minutes before adding it to a blender, blending the soup until smooth.
  4. Season with chopped coriander, salt and pepper before placing into warm bowls.
