A delicious accompaniment to any dish that requires an exotic nuance only tamarind can give


Ingredients

Method

  1. In a deep pan, take the water and place on medium heat.
  2. Add the tamarind and chopped dates and allow to cook for 8-9 minutes on a low flame till they soften.
  3. Add the powdered jaggery and continue to cook, stirring occasionally, until the jaggery has dissolved and the mixture has started to thicken.
  4. Add all the spice powders, stir and simmer for a further 1-2 minutes. Season with salt to taste.
  5. Let the chutney mixture cool down. If you like a chunky chutney, then it’s ready. If you would like a smoother chutney, then you can add more water, run it through a blender and also strain the chutney through a strainer, to obtain a very smooth sauce-like chutney.
  6. Store the chutney in an airtight bowl or container in the refrigerator and use as desired.
