Method

  1. In a mixing bowl add the red kidney beans, chickpeas, corn and salt. Mix together well until combined.
  2. Cut the peppers and celery into medium cubes. Peel and Julienne the carrots, chop the spring onion and coriander and add everything to the mix.
  3. Finally, add the French dressing and lemon juice to taste. Garnish with chopped coriander if you wish.
