Method

  1. Follow the instructions on the packet to cook the rice and then drain with cold water to cool. Set aside.
  2. Finely chop the pepper, tomato and spring onions.
  3. When the rice has completely cooled, place it in a mixing bowl and add the tuna, peas, pepper, sweetcorn, spring onion, tomatoes, olives and parsley and mix the ingredients together.
  4. Add the mayonnaise, lemon juice and olive oil into the ingredients and serve.
