USA Pear and Feta Salad

About

The sweet flavour of pear complemented with a salty kick

Ingredients

250g Feta cheese
4 handfuls Purslane leaves
1 USA Green Anjou pear
1 tbsp Honey
4 tbsps Olive oil
2 tbsp Balsamic vinegar
2 tsp. Mustard
1/2 tsp Salt
1 small Garlic clove

Method

Mince the garlic. Add the mustard and honey. Mix in the olive oil and balsamic vinegar. Stir thoroughly and set aside.
Place the USA pear slices in a large dish. Add the purslane, dressing, salt, pepper and toss lightly.
Crumble the feta cheese over and serve immediately. Finally, add the toasted walnuts or cranberries if desired.
